RESEARCH INTERESTS:

My historic research focus has been towards the influence of oxidation during food processing on sensory and nutritional properties of food.  Recently, I have been particularly interested in antioxidant compounds in rice bran such as the tocols, gamma oryzanol and rice wax.  I have pioneered innovative approaches to their recovery, such as the use of supercritical fluids and preparative scale HPLC, and their utilization as functional food ingredients.
