CURRENT RESEARCH INTERESTS: 1) Functional dairy foods: influence of health beneficial components (such as probiotics, carotenoids, vitamins, minerals, omega 3 fatty acids, immune enhancers, fiber, resistant starch) on the on the physico-chemical, micribiological and sensory characteristics of dairy products (such as yogurts, cheeses and ice creams). 2) Non thermal processing of fluid foods: Influence of pulsed electric fields on the probiotic bacterial characteristics (such as growth, acid tolerance, bile tolerance, protease activity) and on the characteristics of probiotic fluid dairy foods (such as fluid milk, drinking yogurt).
